Smart Sensor for Testing Agrifood Quality & Safety at the Point of Care

The Device we present is a Lab-on-Chip. It consists of a system on glass (SoG), where are integrated photosensors for light detection, a thermalization system and sensors for controlling the temperature. The SoG is coupled with a microfluidic system where biological assay occurs and allows the detection of mycotoxins and food pathogens. The system is contained in a portable metallic box. The assays consist of specific recognition elements for the detection of the mycotoxins, which identify the target (mycotoxins) and emits a luminescent signal when the target is present. The luminescent signal is then detected by the photosensors. In the case of food pathogens, the system is able to perform a molecular test: identify a specific DNA sequence of the pathogens, which is amplified and detected by the photosensors following the luminescent signal generated during the DNA amplification. The thermalization system ensures the reactions occurring at the requested temperature.

As part of specific departmental and multidisciplinary initiatives (Department of Management) for consumer protection and developed within the Commodity Laboratory, we have identified a cluster of specific and innovative indicators [molecular markers] which allow to better characterize the perceived quality of some commercial food products.In particular, we applied our model to pasta [primary sector of interest], craft beers, grappa and coffee. The main aim of our studies is to discriminate commercial products which, thanks to their specificity - deriving in particular from "mild" industrial treatments - can benefit from "premium price" logics.

PuroSole Sistemi Solari a radiazione diretta

Heliostats are devices that reflect the sun's rays onto a fixed target. They use motorized reflecting surfaces that automatically follow the trajectory of the Sun. Today they are used only in large plants for the production of electricity with reflecting surfaces of hundreds of square meters and millionaire investments (such as the Archimede thermodynamic plant by Carlo Rubbia). But we think that a heliostat can also be used for other purposes, such as: lighting environments where the sun does not reach, cooking food, water pasteurization, etc. and without the need to use any type of energy other than solar radiation. We have therefore studied and created a simple, cheap and easy to use heliostat. The study and creation of the first prototypes required several years and involved considerable economic resources. A medium-sized coffee roasting plant (30 kg/hour) was also built. The plant, the Hw/Sw projects, the patents, the prototypes, were brought by the partners supplied to the new Start Up Digitarch Farm which will develop the production and commercial process using the already registered PuroSole brand.

Circular Farm la fattoria urbana circolare

Circular Farm is an urban farm, inspired by the circularity of nature. In our circular agricultural process we produce Oyster mushrooms reusing the coffee grounds from the bars and other product like medical mushrooms, micro-vegetable, flours, eggs, worm humus and compost. Our process is innovative, because we use a vertical systems of cultivation in the shipping containers, out of land. In addition to the production of mushrooms, our company produces micro-vegetables and vegetables from hydroponic cultivation systems (aquaponic system) and with a synergic garden. From the mushrooms substrate, we make a compost pile and thanks of the aerobic fermentation we produce hot water that we use in winter time for heating our greenhouse. In our Circular Farm space we organize educational tour for schoosl, experience, workshops and training for the people that want to replicate our circular system.

Our project was designed to significantly reduce the pollution caused by the spraying of chemical products such as copper and sulfur in the vineyards. Copper is a heavy metal and for this reason toxic to soils while sulfur causes serious irritation to the respiratory system and to the skin of men. These two pollutants are very harmful to our ecosystem and the environment. Unfortunately, these products are widely used in agriculture because they are used to fight diseases such as Peronospora and Oidium. These fungi affect all agricultural cultures but in particular the excellent vine of Made Italy for the production of quality wine.

The main components of the project are blockchain-tracked products and metabolic avatars. The blockchain aspect includes a wide range of agri-food products from select Italian companies, allowing users to interact with them in an immersive experience. They can learn about the products' origins, nutritional characteristics, and make informed choices. Users can also connect with the producing companies, gaining insights into their sustainable production practices and the food supply chain. The metabolic avatar is a personalized digital representation of an individual's metabolism, created using information from wearable devices such as smart bands and impedance scales. It enables real-time and remote monitoring of physiological parameters, providing data used to deliver a customized quality index for food choices based on simulated metabolic effects. The avatar tracks user metabolism levels over time, offering a comprehensive view of metabolic variations and responses to consumed foods and supplements. The personalized metabolic avatar (PMA) employs a deep learning GRU (gated recurrent unit) model trained to predict weight changes, blood glucose, and other physiological variables tailored to macronutrient composition and daily energy balance. The model allows simulations and evaluations of dietary plans, facilitating the definition of customized goals for achieving ideal weight. NECTAR's platform integrates metabolic and sensory avatars, blockchain, and virtual reality technologies to create a metaverse dedicated to agrifood. Avatars interact with blockchain-tracked products, providing consumers with detailed information on the origin, quality, and sustainability of food products. By combining sensory and metabolic analyses with blockchain, NECTAR ensures transparency, sustainability, and food safety, meeting the needs of consumers, institutions, and companies. The ultimate goal is to promote sustainable agriculture, environmentally and human-health-friendly food production, circular economy, and the reduction of food waste, following the "One Health" approach. NECTAR addresses various industrial, economic, and social challenges. It tackles the lack of transparency in nutritional information and the presence of unhealthy ingredients in food products. It also aims to combat the global obesity epidemic by promoting balanced and healthy eating. Furthermore, NECTAR aims to address social issues by offering affordable access to nutritious and sustainable food. In conclusion, NECTAR is an innovative proposal that combines emerging technologies like the metaverse, metabolic avatars, blockchain, and NFTs to create a platform dedicated to agrifood, promoting sustainability and transparency in the industry. Despite not being realized yet, presenting this project to the public can generate interest, engagement, and potential collaborations while evaluating market demand.

ANTIBACTERIAL TABLEWARE

The "Antibacterial Plate" project stems from an important Research & Development phase that the company has already undertaken since 2020 during the pandemic. We wondered what could be needed in such a moment and what it could cope with in a market like ours to a pandemic but also to an improvement of catering and private environments.This is how the research and first prototyping phase of this project began, which saw the filing of a patent for a particular object which, due to its particularity, can reject up to 99% of the bacteria that deposit on it can be bacteria of various types and by imagining the various "passages" of dishes, for example in a restaurant or self-service restaurant or naval restaurant halls, we hypothesized that these objects could have an enormous plus compared to other identical but not antibacterial objects.We have therefore arrived at the laboratory certification of products both in single color and with antibacterial decorations and decals with a characteristic that resists the microwave oven and dishwasher for the entire life of the product without ever failing up to at its breakup. This product is extremely innovative as it can be used in many areas, both private and public, to increase hygiene and above all to counteract the spread of bacteria in the kitchen and in refreshment areas without considering that being reusable after washing it is also highly environmental impact and reduces the use of "single portions" which are extremely polluting today.
